Vinification
Manual selection of the grapes on a vibrating table.
Soft pressing, followed by spontaneous alcoholic fermentation in contact with the skins in temperature-controlled stainless steel tanks for about 15 days.
This is followed by a maturation of 6 months in stainless steel, followed by bottling.
