Réva Langhe DOC Bianco “GREY”

Vinification
After the harvest, which takes place manually and strictly in the early morning hours, the grapes are transferred to refrigerated storage, where they remain for 72 hours at 0°C.
Fermentation takes place in temperature-controlled stainless steel tanks and concludes in large Austrian oak barrels. The two grape varieties are kept separate until bottling, after which the wine rests for at least 10 months before release.
