Name: Trentino DOC Superiore Valle di Cembra
Area: Mountain vineyards in Trentino, Valle di Cembra
Soil: Loose marl, rich in limestone and subsoil, derived from sedimentary rocks. Cultivation system: Guyot. Vines over thirty years old. The combination of the high altitude (between 600 and 650 m above sea level) and the westerly exposure ensures slow ripening, creating a perfect balance between grape maturity and acidity. Yield: 40–45 hl/ha
Serving temperature: 16–18 °C
Vinification: The grapes are harvested manually in late September, followed by a week-long cold pre-fermentative maceration and subsequent spontaneous alcoholic fermentation. This is followed by a further period of maceration with daily hand pigeage. Malolactic fermentation takes place in barrels, where the wine is then aged for approximately 18 months. This is followed by a long aging period in the bottle.
Visual assessment: Ruby red colour with light garnet tints.
Nose: Notes of alcoholic fruit, blackberry, liquorice, raspberry, currant and cherry, followed by roasted aromas and light balsamic and spicy nuances (black pepper, cloves).
Palate: Dry on the palate, with just the right amount of acidity and juiciness; silky, velvety tannins with a pleasant fruity return. Spicy notes are prominent, with light balsamic and cinchona notes on the finish. Fine and elegant.
Pairings: Perfect with appetizers featuring smoked meats (pancetta, speck), but also with game salami and medium-aged, semi-hard to hard cheeses. Also excellent with appetizers with meat sauce, truffle risotto, and fish soups. Ideal with slow-cooked duck breast, oven-roasted lamb, and venison fillet with redcurrant sauce.
