Area: Terraced mountain vineyards in Trentino, Valle di Cembra

Soil: Limestone

Location: West (optimal for obtaining ripe grapes, but with a pronounced acidity)

Cultivation system: Trentino pergola and guyot, yield approximately 60 hl/ha

Serving temperature: 8–10 °C

Vinification: After careful hand selection of the grapes, a gentle pressing of whole bunches follows, using only free-run must. Fermentation and aging take place in stainless steel tanks at controlled temperatures. Second fermentation in the bottle according to the traditional method, followed by a long aging on lees for approximately three years in the underground cellar.

Visual inspection: Straw yellow colour; abundant and persistent mousse; very fine and persistent perlage.

Aromatic analysis: Elegant and intense bouquet, fragrant and complex, with floral notes and ripe yellow fruit typical of Chardonnay, complemented by delicate and subtle aromas of hazelnut and lightly toasted bread, thanks to the long maturation on the lees.

Palate: Powerful, savory, mineral, and fresh flavor. A sparkling wine whose character immediately evokes the Valle di Cembra, a particularly suitable terroir for Trentino DOC.

Pairings: Excellent as an aperitif, but also very suitable to accompany the entire meal. Perfect with fish appetizers, vegetables, alpine meats, and aged cheeses, as well as with first courses such as rice and pasta, and main courses with fish and white meat.

Chardonnay
This is a versatile and elegant grape variety known for its fresh acidity and refined structure. It produces wines with aromas of yellow fruit and flowers, often complemented by subtle notes of nuts and brioche. Thanks to its early hand-harvest, it retains its vibrancy and finesse.
