Name: Trentino DOC Superiore Valle di Cembra
(We were the very first winery to apply this stricter production protocol since 2016, the first vintage in which the Valle di Cembra Superiore subzone was introduced.)

Area: Terraced mountain vineyards in Trentino, Valle di Cembra

Soil: Porphyritic and calcareous

Serving temperature: 10–12 °C

Vinification: The grapes are harvested manually and selectively in the first half of September. Fermentation at controlled temperatures and aging for several months take place in stainless steel tanks. This is followed by several months of further aging in the bottle.

Visual examination: Straw yellow colour with greenish reflections.

Nose analysis: Fine and intense nose with notes of aromatic herbs, elderflower, tropical fruit and citrus.

Palate: Savory and mineral, with a pleasant acidity, typical of mountain wines. Dry and persistent. With aging, the mineral and aromatic components become even more pronounced. The refined body envelops the palate in an elegant and balanced interplay of velvety notes and fresh acidity. The finish does not disappoint and is surprising with its length.

Pairings: Ideal as an aperitif and with starters featuring raw fish and cured meats. Also pairs well with first courses featuring fish sauces, asparagus, eggs, and mushrooms. Excellent with freshwater fish, such as Trentino trout.

This is an aromatic grape variety that thrives in cooler mountain regions. It produces fresh, elegant wines with vibrant acidity and refined aromas of flowers, herbs, citrus, and light tropical fruit.
