Area: Terraced mountain vineyards in Trentino, Valle di Cembra

Soil: Calcareous

Location: West (optimal for obtaining ripe grapes, but with a pronounced acidity)

Cultivation system: Guyot, yield approx. 60 hl/ha

Serving temperature: 8–10 °C

Vinification: Hand-harvested in the first ten days of September. The must is selected from a soft pressing of the grapes. Fermentation takes place at low temperatures and a short rest in steel tanks. Second fermentation and aging takes place on the lees until remuage and subsequent disgorgement.

Visual inspection: Brilliant antique pink colour; abundant and persistent mousse; very fine and persistent perlage.

Nose analysis: Aromas of small red fruits, currants, raspberries, pomegranate and strawberries, with delicate hints of almond.

Palate: Fine and elegant on the palate. Powerful, savory, mineral, and fresh flavor, originating from the mountains.

Pairings: Excellent as an aperitif. Also a perfect accompaniment to many appetizers, such as smoked trout tartare, first and second courses with fish, and white meat. Also excellent with medium-aged cheeses.

This is a noble grape variety known for its finesse and elegance. It produces fresh, refined wines with aromas of red fruit like strawberry and raspberry, complemented by subtle floral and spicy notes and lively acidity.
