A vibrant red wine from Novello, made from 100% Barbera grapes grown on twenty-year-old vines. Deep ruby red in color with aromas of cherry, plum, and violet, complemented by subtle notes of licorice, pepper, and coffee. Soil: alternating marl-rich strips with a high content of fine sediments, silt and clay.

Vinification: cooling of the grapes, maceration of the skins with removal of the stalks for approximately 20 days, with daily stirring (pigeage).

Fermentation: at controlled temperatures (max. 28°C) in stainless steel tanks, using the best wild yeasts.

Maturation: malolactic fermentation in contact with fine yeast cells for several months, then clarification and storage in stainless steel tanks.

Flavour and aroma characteristics: deep ruby red colour, fruity bouquet of cherry and plum, floral notes of hydrangea and violet, with subtle aromas of licorice, pepper and coffee.

Cultivation: integrated crop protection with low environmental impact.
