Soil: Hilly, of volcanic origin, composed of porphyry and granitic rocks, rich in minerals and particularly iron – acidic pH

Cultivation method: Guyot

Harvest: Manual with bunch selection in October

Vinification: Destemming and soft pressing – Fermentation in stainless steel tanks at a controlled temperature of 30–33 °C, followed by a maceration of 20 to 30 days.

Maturation and refinement: At least 42 months in 5 hl oak barrels – further maturation in steel and in bottle.

Serving temperature: 18 °C

Nebbiolo
This is a noble, late-ripening grape variety from Piedmont, northern Italy, known as the foundation for great wines like Barolo and Barbaresco. It produces wines with a light color yet powerful structure, firm tannins, and fresh acidity. Typical aromas include rose, violet, red fruit, and earthy notes of tar and truffle. Nebbiolo wines develop beautifully with age, developing complex nuances of leather, tobacco, and spice.
