Tasting notes:
Fresh fruity notes with pronounced aromas of cherry, complemented by hints of aromatic herbs and liquorice.
Treatment of the grapes:
After harvest, 20% of the grapes are left to rest in the fruiting chamber for a maximum of 10 to 15 days to develop more structure and aromas. The exact duration of this rest period depends on rainfall in the weeks leading up to the harvest.
Maturation:
After pressing, the wine is aged for six months in stainless steel tanks and then bottled immediately. With this wine, we aim to emphasize the identity and character of the terroir; freshness and drinkability are key. The absence of residual sugar enhances the minerality and savoriness of the wine, giving this Valpolicella finesse and elegance.
