Designation of Origin: Valpolicella Superiore DOC

Tasting notes:
A unique expression of freshness, combined with the typical characteristics of a light appassimento. Aromatic sensations of spices with a subtle sweetness, reminiscent of licorice on the finish, elegantly rounding off the tasting with a refined, recurring complexity that only great wines can achieve.

Treatment of the grapes:
After harvest, the grapes rest for approximately 15 days in the fruiting chamber to allow excess moisture to evaporate from the berries. The exact duration depends on rainfall in the weeks leading up to the harvest.

Maturation:
Total maturation of 1 year, consisting of:

• 60% in French oak barriques (second pass) with extra-fine grain. The staves are aged for 36 months before toasting to ensure a softer influence on the wine. In addition, 20% of the oak is untoasted to further soften the oak influence and respect the wine's identity.
• 30% in 10 year old Italian botticelle, which provides extra softness and a subtle wood influence.
• 10% in terracotta amphorae, to keep the hilly character alive and emphasise the mineral and savoury expression of the terroir.

50% Corvina, 20% Corvinone, 25% Rondinella, 5% Oseleta-Croatina
This classic Valpolicella blend combines Corvina for fresh red fruit and elegance, Corvinone for structure and spice, Rondinella for softness and balance, and Oseleta-Croatina for added color, concentration, and depth. Together, they create a powerful yet refined wine with complexity and character.
