This is a fresh and aromatic white wine with a straw-yellow color and green glints. The nose reveals notes of lemon balm, peach, and white flowers, while the palate is lively, mineral, and elegantly refreshing. The typical mountain freshness of Palai gives the wine tension and finesse. Excellent as an aperitif or with fish dishes, light pastas, and spicy dishes. A pure, elegant expression of the Dolomites.

A straw-yellow wine with greenish highlights, clear and lively. The intense and aromatic bouquet opens with notes of lemon balm and peach. The fresh acidity and slightly aromatic note make this wine a tempting accompaniment to both refined haute cuisine fish dishes and simple freshwater fish preparations. It pairs particularly well with "strangolapreti" with butter and sage – a typical Trentino dish – and with all herbaceous dishes. Also excellent as an aperitif .

Location of the vineyard:
In the Palai region, at 550–750 meters above sea level, with a southeasterly exposure. The vineyard is well-ventilated by the influence of the Ora del Garda, a wind from nearby Lake Garda.

Growing system:
“Pergoletta trentina aperta” with 6,500 vines per hectare and Guyot with 6,200 vines per hectare.

Soil type:
From a geomorphological perspective, Faedo lies between the Permian porphyry formation (volcanic rock) and the Werfen deposits of sandstone, siltstone, marl, limestone, and dolomite. The soil varies in depth from 30 to 100 cm, is clay-calcareous, and rests on a marly substratum.

80–90 quintals

A wine that is best enjoyed young, but which can also pleasantly surprise after 5 to 10 years of maturing.

Thanks to the microclimatic conditions of Palai – where the Müller Thurgau vineyards are concentrated – Faedo is one of the most representative areas in Italy for this grape variety, along with the Val di Cembra and the Valle Isarco.
To preserve the aromatic properties and natural antioxidants of the grapes, they are processed in hyper-reductive conditions (without oxygen), a technique developed and patented by the winery itself.
