Mon Carul Ampo Dottore – Riesling DOC
An expressive and characterful Riesling from Oltrepò Pavese, with a bright straw-yellow color and golden reflections. Fresh and fruity on the nose in its youth, it becomes increasingly complex as the wine matures and the typical Riesling aromas unfold. On the palate, it is taut, lively, and precise, with fresh acidity and a long, invigorating finish. A wine with personality and finesse, perfect with shellfish, creamy white meat dishes, or surprisingly well paired with a classic pasta aglio, olio e peperoncino.

Riesling has a long history: there are several written references to this grape variety dating back to the 15th century, albeit with varying spellings. The modern spelling Riesling was first recorded in 1552, when the grape was mentioned in Hieronymus Bock's herbal Kreutterbuch .
Riesling was introduced to Oltrepò Pavese at the beginning of the 20th century, along with other international grape varieties, following the phylloxera epidemic that hit the region at the end of the 19th century. Today, Riesling is grown on approximately 145 hectares, spread across several distinctive crus.

Tasting notes
Straw yellow color with golden reflections. Fruity in youth; with age, the bouquet becomes increasingly complex, revealing the unmistakable aromas of the grape variety. Crisp and fresh, with long persistence. A wine with a distinct personality.
Serving temperature: 8–10 °C
Food pairings: Seafood (especially shellfish), white meat with creamy sauces, and—why not?—spaghetti aglio, olio e peperoncino!
Vinification
Gentle pressing of the grapes (pressure: 1 bar). Fermentation of the must at 16°C for 3 weeks. Maturation for 5 months in stainless steel tanks with regular bâtonnage, followed by approximately 1 month of bottle aging.
