Soil:
The soil is of very ancient origin and is characterized by the so-called "Rocche" : sandy, crumbly soils with an ochre color. The Astian marls from the mid-Pliocene, which characterize the mid-height and higher slopes of this area, provide an excellent environment for the production of austere yet exceptionally refined and elegant wines with floral and fruity notes.

Pressing: Mechanical, with destemming
Fermentation: Vinification of the must with temperature control
Yeasts: Selection of indigenous yeasts

Colour: Straw yellow with light amber reflections
Nose: Intense yet refined, with aromas of flowers and fruit
Taste: Fresh, dry and slightly spicy/herbaceous, with a lingering aftertaste

Food pairings: Pairs excellently with mature cheeses with strong flavours, white meat, shellfish and fish (obviously)
Serving temperature: 10–12 °C

Arneis
This is a refined, aromatic white grape variety from Piedmont, known for its fresh character, floral aromas, and subtle fruit notes. It produces elegant, dry wines with a lively freshness and a light spiciness.
