Gabriele Scaglione Ellis – Langhe DOC Bianco
An elegant and layered white wine that perfectly blends Arneis and Chardonnay. The wine has an intense straw-yellow color with golden reflections and seduces with aromas of flowers, white fruit, and subtle vanilla notes. Full and generous on the palate, it has a long finish and a refined hint of almond and vanilla. Thanks to its careful aging in steel and barrique, Ellis offers both freshness and depth. A stylish white wine that pairs beautifully with shellfish, oysters, foie gras, and aged cheeses.

Soil:
Sandy, calcareous, and clayey. The soil is of very ancient origin and is characterized by the so-called Rocche (sandy and crumbly). This provides an excellent environment for the production of austere yet exceptionally refined and elegant wines with floral and fruity notes.
Planting density: 5,000 vines per hectare
Average age of the vines: 18–20 years
Yield per plant: 2 kg

Pressing: Mechanical, with destemming
Fermentation: Vinification of the must with temperature control
Yeasts: Selection of indigenous yeasts
Maturation:
- Arneis matures for 10 months in stainless steel tanks
- Chardonnay matures for at least 12 months in barriques (0% new wood)
Throughout the entire maturation process, decisions are made only after careful evaluations and continuous tastings.
Alcohol percentage: 13.0% vol.
Colour: Intense straw yellow with golden reflections
Nose: Intense and characteristic, with aromas of flowers, white fruit and vanilla
Taste: Powerful and generous, with a light aftertaste of almond and vanilla. Very long finish.
Food pairings: Matured cheeses with pronounced flavors, shellfish, oysters and foie gras
